It's used because it enhances certain flavors. Try adding some lime to your home-made chicken soup, you'll see (once you serve your portion, not during cooking). <BR/><BR/>Also, please be aware that the reason you get sick is NOT because of lax hygiene, but because of different types of naturally occurring bacteria. We were absolutely vigilant about cooked food and bottled water. But then, there was a party. All kinds of stuff came out for our tasting, with each neighbor chipping in. One neighbor was helpful enough to make spicy beer (micheladas?). And, she contributed ice from her freezer to keep it cold... Oh, and you should be ok if it is cooked or you can peel it; if you are talking about non-cooked produce, expats will soak same in water that you put minute levels of iodine drops into.
